Yes, it is possible. 

To record from several monitors at once launch Screen Capture, click anywhere on screen to select random capture area and select, for example, DISPLAY1 from Capture area list in Screen Capture control panel. Then drag the border of capture area (orange rectangle) to cover both monitors, continue dragging the border until both monitors are selected. After that you can start recording as usual.

 

Please note that if your monitors have different resolutions (especially when you use monitors with different aspect ratios) and the monitors are positioned in horizontal configuration, then the capture area's height will be limited by the height of the monitor with the lowest resolution.


Example: you have two monitors - one with 1920x1080 resolution and another with 1024x768 resolution. 

In this case, the height of the monitor with the lowest resolution is 768, thus the size of capture area for recording both monitors will be 2944(1920+1024)x768.


If the monitors are positioned in vertical configuration, then the capture area's width will be limited by the width of the monitor with the lowest resolution.

Example: you have the same two monitors with 1920x1080 and 1024x768 resolutions, but one monitor is positioned atop another. In this case, the width of the monitor with the lowest resolution is 1024, thus the size of capture area for recording both monitors will be 1024x1848 (1080+768).
